Instructions:
For the spicy lamb meatballs:
Mix all the meatball ingredients except for the olive oil in a large bowl until well combined. Form into 2 to 3 tbsp-sized meatballs.
Heat the olive oil in a nonstick skillet over medium heat. Cook the meatballs for 3 minutes per side or until cooked through. Drain them on paper towels.
To assemble:
Add lettuce and saffron rice to 2 bowls. Layer the ingredients on top and finally the lamb meatballs. Serve warm.
